These cookies are easy, delicious and soft inside :-)


  • 60 g small oatmeal flakes
  • 60 g almond flour (grind into a coarsely almond powder, or use other oily nuts or seeds)
  • 20 g dried coconut
  • 1 tsp lemon juice
  • ½ tsp lemon zest
  • 1 tsp freshly grated ginger
  • 140 g date paste (70 g pitted dates cut into small pieces and 70 g water, soaked and then turned into a paste with an immersion blender)
  • 1/8 tsp salt


Mix all the ingredients well until you get a soft dough, first the wet ones, then the coconut, the oats last. Using a spoon, portion the biscuits keeping an irregular shape placing one by one on a baking tray. Bake for 20 to 25 minutes at 180º C.
