The basic cooking classes, the thematic courses and the private lessons aim to develop in participants the awareness of correctly combining different foods that earth provides us with to create balanced energetic and healthy menus.

In the different modules we will supply basic information to cook in a healthy way, keeping the characteristics of food unchanged as much as possible, and creating tasty and delicious recipes that give joy and a sense of feeling light still satisfied.

We will also dedicate considerable time to truly experiment the recipes while studying them.

The courses are open to all those who are interested in learning more about techniques and methodologies of a whole food plant based diet. No previous experience is required.

To allow an adequate discussion during the classes and a good participation in the preparation of the recipes, the group will consist of no more than 10 people.

Participants will be provided with all the ingredients and tools needed, as well as a handout with the information and recipes of the program.

For courses held in Italy the language will be Italian unless previously agreed to have the course in English or Spanish.

ABC, Avventura Benessere Cucina, a week of wellness in a beautiful Palazzo in the heart of Italy with the goal is to embrace wellness and discover the many benefits of whole plant based nutrition and cuisine. In addition to the workshops, participants will be able to practice yoga, walk, swim, and explore the enchanting surroundings.

The program is available the weeks of:

BASIC LEVEL

Goal

To know the basic procedures needed to perform independently and with creativity most of the main vegan dishes and some specific whole-vegan dishes, while also doing so.

Ways to participate

The first module is the basis for participation in the subsequent modules.

Other modules than the first one can be followed individually and need not be sequential.

For courses held in Italy the language will be Italian unless previously agreed to have the course in English or Spanish.

General structure

The course is structured in 5 modules (lessons) each comprehensive of:

. basic techniques to have the ability to perform recipes autonomously

. practice with the real and proper performance of some recipes

. tasting

Detailed Program

The Art and Flavor of Wellness with the revitalizing and tasty Whole-Vegan Cuisine

Module 1 –

Discovering healthy replacing ingredients, also for cheeses!

  •  Introduction and ingredients
  • Most commonly used techniques (with and without cooking)
  • Healthy ingredients and substitutes for those previously used (salt, sugar, eggs, milk and dairy, spreads, butter, oil, margarine and mayonnaise)
  • Learning the basic techniques to build these ingredients.

Module 2 – Raw food: basics, salads, smoothies and cold pressed juices

  • Raw cuisine. dehydration, spprouting and fermentation
  • Salads, principles, basic concepts and recipes (raw broccoli sald, asian-carrot salad, egless-egg salad)
  • Green-Smoothies, why and when. Basic recipe and variations
  • Juice extracts, why and when. Proportions and recipes.

Module 3 – Hors d’oeuvres and first courses

  • Legume and vegetable spreads: Hummus and Babaganoush
  • Crudité rolls
  • Pasta without pasta: raw and cooked: vegetable Lasagne and Zucchini spaghetti with variation
  • Soups, general indications.

Module 4 – Main courses

  • VegBurger with cooked beans and baked Falafel with raw sprouted chickpeas
  • Spring rolls wrapped in cabbage leaves with Satay Sauce
  • Eggplant little towers with spinach, tomatoes and cashew cream
  • Vegetable dishes, general indications.

Module 5 – Desserts, raw and cooked, without sugar and always organic

  • Baked cakes: banana and oatmeal muffins  … even with chocolate chips!
  • Quick cookies (3 in 1): raw truffles, dehydrated cookies (raw), baked cookies.
  • Raw cakes:  – chocolate (cocoa and avocado ganache on a bed of dried fruit and nuts), – cheesfake (cashew, coconut and lime cheesecake)

THEMATIC COURSES

Objective

Explore and expand on some important themes for those who are interested in changing their diet to heal from physical discomforts, improve health, better sports performance, discover already during childhood a healthy, safe and joyful diet.

Learn special recipes to add to the whole-vegan ones learned in the basic level course.

Participation mode

Each module deals with nutrition focusing on a specific target or theme, and therefore can be followed individually.

Some modules provide co-teaching and/or the testimonial of experts who will talk about experiences, can answer questions and clarify doubts. For example the module “chronic illness” provides co-teaching with doctors who have chosen a whole food plant based diet as an essential support in the caretaking of their patients; the module “sports” foresees the participation of athletes and/or coaches who have chosen the whole-vegan diet as their main regime; the module “children and adolescents” will also present the testimonial of mothers and/or adults raised with a vegan approach to food.

For courses held in Italy the language will be Italian unless previously agreed to have the course in English or Spanish.

The lessons will take place on Mondays or Fridays from 16 to 20 hours.

PRIVATE LESSONS AT HOME

Complete Ad Hoc 5 lesons course

Full programming according to the situation (contents, schedule, chosen day, location).

Minimum 5 participants, duration about 2,5 hours per lesson.

Whoever is in charge of forming the group, also defines the location and the 5 dates/schedules for the 5 cooking lessons.

The first lesson is compulsory. The other 4 lessons are neither compulsory nor sequential although need to have a minimum of 5 participants (excluding the organizer-host).

Whoever organizes the course and provides the location will take part free of charge.

Cost: 1° lesson 60 €, 2° to 5° lessons 50 € each, the entire course 250 €
